Overview

New England Culinary Institute combines European apprenticeship with American academics and entrepreneurship to produce well-rounded, articulate, confident culinary professionals.  New England Culinary Institute prides itself on the personalized educational opportunities it provides through its 10:1 student to teacher ratio and its focus on developing lasting relationships between its students and staff.  Many students and graduates have received prestigious awards, such as “Rising Star Chef of the Year,” ACF Regional Culinary Knowledge Bowl gold, and Food & Wine magazine’s Top Ten List of Best New Chefs.  New England Culinary Institute is a private, co-educational institution with two campuses in Vermont.  Its goal is to be the recognized leader in delivering hands-on, standards-based education for the food and beverage industry.

History

Fran Voigt and John Dranow founded New England Culinary Institute in 1980 out of a passion to produce culinary education graduates who would excel in spite of the demands and pressure of kitchens and restaurants that are currently serving the public.  Fran Voigt believed that equipments and buildings don’t teach-people do.  What began as a one-program institution with only seven graduates the first year has grown to eight programs with over 500 students.

Academics

New England Culinary Institute has over 80 faculty members with various impressive credentials in the food and beverage industry.  With 13 production kitchens that include restaurants, bakeries, banquets, garde manger, and corporate dining rooms, New England Culinary Institute helps its students learn by living it.  Programs of study include the following:

  • Bachelors Degree in Culinary Arts*
  • Associates Degree in Culinary Arts
  • Associates Degree in Baking and Pastry Arts
  • Bachelors Degree in Hospitality and Restaurant Management*
  • Associates Degree in Hospitality and Restaurant Management
  • Certificate in Professional Cooking
  • Certificate in Baking
  • Certificate in Pastry

*There are three specialization options in these programs:  Specializations in Sustainability, Wine and Beverage Specializations, and Baking and Pastry Specializations.

Part of the New England Culinary Institute experience is its unique focus on internships.  Once students have learned the skills and mastered the content, they have the opportunity to practice their skills at some of the most prestigious restaurants, resorts, corporations, and other institutions in the world.  It’s a valuable experience in that students learn more about themselves and their future in the culinary world as well as build an impressive resume.  Internships also provide pay, academic credit, and valuable experience.

Program affiliations include American Culinary Federation; American Institute of Wine & Food; Council on Hotel, Restaurant, and Institutional Education; International Association of Culinary Professionals; James Beard Foundation, Inc.; National Restaurant Association; National Restaurant Association Educational Foundation; and Women Chefs and Restaurateurs.

Online/Distance Learning

New England Culinary Institute has an online degree program in Hospitality and Restaurant Management and offers courses in:
